The Grenache grapes are picked at a specific time, determined by the tasting of the fruit before the harvest, in order to obtain the full intensity that is a characteristic of this grape variety. After the harvest, the grapes are delicately pressed upon arrival at the winery. The alcoholic fermentation is then quickly initiated at a controlled temperature to preserve the fullness and freshness of the flavors. After a light fining, the bottling takes place early to preserve the wine’s fresh fruity character.
